Ways to Make Roasted Chicken

This chicken recipe is stuffed with lemon and bay leaves and then roasted in a delicious sauce of white wine, rosemary, and 20 garlic cloves. While this may sound like a lot, the dish is not overly garlicky. The garlic is roasted in its skin and imparts a delicate flavor to the white-wine sauce.

That being said there are many recipes for roasted chicken and they all have different combinations of spices. Many recipes call for a bread stuffing to be used and some call for a vegetable stuffing.

How to Store Leftover Chicken

Cooked chicken should be stored in an airtight container in a refrigerator for up to 3 days. If you are not going to eat the chicken within 3 days it should be stored in the freezer in an airtight container for up to 6 months.

I do not use freezer containers much but I do use a vacuum sealer to put all of my frozen food into. I do not use it for food going into the refrigerator because you cannot store most foods for more than 3 days so I use airtight containers for that.

How to Make This Garlic Roast Chicken With White Wine Sauce

When dealing with chicken you will want to take precautions not to spread bacteria while preparing it. Wash your chicken under warm water before preparing the chicken. When cooking your chicken you want the internal temp of the chicken to reach between 165 – 175 degrees F.

What You Need to Make Garlic Roast Chicken With White Wine Sauce

Prep your area and layout all of your ingredients before starting.

Equipment Needed

  • small mixing bowl
  • large baking dish
  • small saucepan

Ingredients Needed

3 ⅓ lbs whole chicken (free-range, patted dry inside and out)
1 lemon (halved)
3 bay leaves
1 tbsp olive oil
1 ½ tbsp rosemary (​finely chopped)
½ tsp sea salt
13 ½ oz chicken broth
3 ⅓ oz white cooking wine
20 cloves of garlic (unpeeled)

Time needed: 2 hours and 20 minutes.

How to Cook Garlic Roast Chicken With White Wine Sauce

  1. Preheat the Oven

    Heat the oven to 375 F (190 C).

  2. Stuff and Tie the Chicken

    Pat the chicken dry. Place lemon halves and bay leaves in the chicken cavity. Tie the legs together with kitchen string.

  3. Mix the Rub

    In a small bowl, mix together the olive oil, rosemary, and salt. Rub mixture over the entire chicken.
    Place the chicken in a large baking dish. Set aside.

  4. Prep the Sauce

    Bring the chicken stock, white wine, and garlic cloves to a simmer in a medium saucepan. Pour the liquid and garlic cloves into the baking dish around the chicken. Cover the baking dish with foil, crimping the edges tightly around the dish so that no steam can escape. Roast for 1 hour 20 minutes.

  5. Remove the Foil

    After this time, remove the chicken from the oven and remove the foil. Place chicken back in the oven, and roast for another 20 minutes or until the chicken is golden brown.

  6. Remove the Chicken and Let it Rest

    Remove chicken from the oven and loosely cover it in tinfoil. Let it rest for about 15 minutes.

  7. Remove the Sauce

    Spoon the sauce from the baking dish into a saucepan, and keep it warm. You can strain some of the garlic cloves into the sauce, or just keep the cloves whole.

  8. Serve the Chicken

    Serve chicken with garlic sauce on the side. Place a few garlic cloves on each plate so that guests can squeeze garlic onto the chicken if they wish.

It’s best to use a cutting board or serving board with a moat to catch the juices that will emerge as you cut into the chicken. Start by cutting off the drumsticks, then wings, then the thighs, and finally the white meat.
